Ingredients

  • 12 oz fettuccine pasta
  • 2 tbsp olive oil
  • 1 lb chicken breast, cubed
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1.5 tbsp Cajun seasoning
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1.5 cups heavy cream
  • 1 cup parmesan cheese, grated
  • 2 tbsp parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil and cook the fettuccine according to the package instructions. Drain and set aside.

Step 2

While the pasta cooks, heat olive oil in a large skillet over medium-high heat.

Step 3

Season the cubed chicken with salt, pepper, and 1 tablespoon of Cajun seasoning. Add the chicken to the skillet and cook for 6-8 minutes or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, add the minced garlic, red bell pepper, and yellow bell pepper. Sauté for 3-4 minutes or until the peppers are tender.

Step 5

Reduce the heat to medium and pour in the heavy cream. Stir in the remaining Cajun seasoning and let the sauce simmer for 3-5 minutes, stirring occasionally.

Step 6

Add the grated parmesan cheese to the sauce, stirring until melted and well incorporated.

Step 7

Return the cooked chicken to the skillet and toss to coat in the sauce.

Step 8

Add the cooked pasta to the skillet and toss everything together until the pasta is evenly covered in the sauce.

Step 9

Serve hot, garnished with chopped parsley and extra parmesan cheese, if desired.
