Ingredients

  • 400 g Spaghetti or linguine
  • 100 g Stale bread or bread crumbs
  • 60 ml Extra virgin olive oil
  • 2 pcs Garlic cloves, minced
  • 15 g Fresh parsley, chopped
  • 1 tsp Red chili flakes (optional)
  • 1 to taste Salt
  • 1 to taste Freshly ground black pepper
  • 50 g Parmesan cheese (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti or linguine according to the package instructions until al dente, then reserve 1 cup of pasta water, and drain the pasta.

Step 2

If using stale bread, pulse it in a food processor until it forms coarse crumbs. Alternatively, you can use pre-made bread crumbs.

Step 3

In a large skillet, heat half of the olive oil (30 ml) over medium heat. Add the bread crumbs and toast them for 4-5 minutes, stirring frequently, until golden brown and crispy. Remove the toasted bread crumbs from the skillet and set them aside.
