Ingredients

  • 12 oz spaghetti or linguine
  • 4 tbsp extra-virgin olive oil
  • 2 tbsp unsalted butter
  • 1 cup panko bread crumbs
  • 4 large (minced) garlic cloves
  • 1 tsp red pepper flakes
  • 0.5 cup Parmesan cheese, grated
  • 2 tbsp parsley, chopped (optional)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta until al dente according to the package instructions. Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the panko bread crumbs and toast, stirring frequently, until golden brown and crisp, about 3-4 minutes. Transfer the toasted bread crumbs to a small bowl and set aside.

Step 3

In the same skillet, heat the remaining 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and cook, stirring often, until fragrant but not browned, about 1-2 minutes.

Step 4

Add the red pepper flakes to the skillet and stir for about 30 seconds. Then, add the cooked pasta to the skillet and toss to coat in the garlic-oil mixture.

Gradually add some of the reserved pasta water, 1-2 tablespoons at a time, as needed to loosen the sauce and coat the pasta evenly.

Remove the skillet from heat and stir in the grated Parmesan cheese. Season to taste with salt and black pepper.
