  • 200 grams bacon (thick-cut, diced)

  • 3 cloves garlic (minced)
  • 0.5 teaspoon red chili flakes (optional)
  • 400 grams canned diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 10 grams fresh basil leaves (chopped)
  • 50 grams parmesan cheese (grated, for serving)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, then drain, reserving 1/2 cup of pasta water. Set aside.

Step 2

While the pasta cooks, heat a large skillet over medium heat. Add the diced bacon and cook until crispy, about 6-8 minutes. Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate. Leave about 1 tablespoon of bacon fat in the skillet.

To the skillet with the bacon fat, add olive oil and minced garlic. Sauté for about 1 minute, until fragrant, but be careful not to burn the garlic.
