Ingredients

  • 400 grams Pasta (spaghetti, fettuccine, or penne)
  • 200 grams Bacon
  • 250 grams Mushrooms (button or cremini)
  • 2 medium Onions
  • 3 cloves Garlic
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 80 milliliters Dry white wine (optional)
  • 150 milliliters Heavy cream
  • 60 grams Parmesan cheese (grated)
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley (chopped, optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining and set the pasta aside.

Step 2

Meanwhile, slice the onions thinly and chop the garlic finely. Clean the mushrooms with a damp paper towel and slice them.

Step 3

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 10-15 minutes until the onions are golden and caramelised. Remove the onions from the skillet and set aside.

Step 4

In the same skillet, cook the bacon over medium heat until it becomes crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and drain on paper towels. Discard excess bacon fat, leaving about 1 tablespoon in the skillet.

To the skillet, add the remaining olive oil and butter. Then, add the garlic and sauté for 1 minute until fragrant.

Add the cooked pasta to the skillet and toss to combine. If the sauce is too thick, add reserved pasta water, a little at a time, until the desired consistency is reached.

Remove the skillet from heat and stir in the grated Parmesan cheese. Garnish with fresh parsley if desired.
