Ingredients

  • 12 oz Pasta (such as fusilli, penne, or spaghetti)
  • 6 slices Bacon
  • 1 cup Frozen peas
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes (optional)
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

While the pasta is cooking, heat a large skillet over medium heat.

Add the bacon slices to the skillet and cook until crispy, about 6-8 minutes. Remove the bacon and place it on a paper towel-lined plate to drain. Once cooled, chop the bacon into small pieces.

In the same skillet, discard all but one tablespoon of the bacon fat and add the olive oil.

Add the minced garlic to the skillet and sauté for 30 seconds until fragrant, being careful not to burn it.

Pour in the heavy cream and stir to combine, scraping up any browned bits from the bottom of the skillet. Season with salt, black pepper, and optional red pepper flakes.

Let the cream simmer gently for 2-3 minutes, then stir in the grated Parmesan cheese until the sauce thickens and becomes creamy.

Add the frozen peas to the sauce and cook for 2-3 minutes until tender.

Stir in the cooked pasta, chopped bacon, and about half of the reserved pasta water. Toss everything together to coat the pasta in the sauce, adding more pasta water as needed for the desired consistency.

Taste and adjust seasoning as needed. Garnish with fresh parsley, if desired, and serve immediately.
