Ingredients

  • 12 ounces Pasta (e.g., penne or fusilli)
  • 1 pound Asparagus
  • 0.5 cup Sun-dried tomatoes (packed in oil, drained and chopped)
  • 4 ounces Goat cheese (crumbled)
  • 3 tablespoons Olive oil
  • 3 cloves Garlic (minced)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper (freshly ground)
  • 0.25 cup Grated Parmesan (optional, for garnish)
  • 2 tablespoons Fresh basil leaves (chopped, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set it aside.

Step 2

While the pasta cooks, wash and trim the tough ends of the asparagus. Cut the asparagus into 2-inch pieces.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the asparagus and a pinch of salt. Sauté for 5-6 minutes until the asparagus is tender-crisp. Transfer the asparagus to a plate and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
