  • 300 grams spaghetti (or pasta of choice)
  • 250 grams asparagus, trimmed and cut into 2-inch pieces
  • 4 pieces large eggs
  • 4 tablespoons olive oil
  • 2 cloves garlic, minced
  • 0.5 teaspoons red chili flakes (optional)
  • 50 grams Parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper, freshly ground
  • 0.5 teaspoons lemon zest (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining and set the pasta aside.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the asparagus and sauté for 5-7 minutes, or until tender but still crisp. Remove the asparagus from the skillet and set aside.

Step 3

In the same skillet, add the remaining 2 tablespoons of olive oil and the minced garlic. Cook for about 1 minute, stirring frequently, until the garlic is fragrant. If using, add the red chili flakes and stir.

Toss the cooked pasta into the skillet with the garlic and chili flakes. Add the sautéed asparagus and 1/4 cup of the reserved pasta water. Stir well to combine, loosening the sauce with more pasta water if needed. Season with salt and black pepper.
