Ingredients

  • 12 oz Pasta (spaghetti, fettuccine, or linguine)
  • 14 oz Artichoke hearts (canned or jarred, drained)

  • 3 tbsp Extra virgin olive oil
  • 4 Garlic cloves, minced
  • 1 tsp Lemon zest
  • 2 tbsp Lemon juice
  • 2 tbsp Fresh parsley, chopped
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 cup Grated Parmesan (optional, for serving)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, then drain and set aside. Reserve 1/2 cup of the pasta cooking water.

While the pasta cooks, slice the artichoke hearts into halves or quarters, depending on size, and set them aside.

In a large skillet, melt the butter over medium heat. Add the olive oil and stir to combine.
