Ingredients

  • 400 grams pasta (spaghetti or linguine)
  • 300 grams artichoke hearts (canned or jarred, drained)
  • 20 grams fresh basil leaves
  • 3 cloves garlic cloves, minced
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 50 grams grated Parmesan cheese (optional)

  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve half a cup of the pasta cooking water, then drain the pasta.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to let it burn.

Add the artichoke hearts to the skillet. Cook for 4–5 minutes, stirring occasionally, until they are warmed through and slightly golden on the edges.
