Ingredients

  • 400 grams pasta (spaghetti or linguine)
  • 300 grams artichoke hearts (canned or jarred)
  • 3 tablespoons extra virgin olive oil
  • 3 garlic cloves, finely minced
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoons red chili flakes (optional)
  • 50 grams parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta cooking water before draining.

Step 2

While the pasta is cooking, drain and rinse the artichoke hearts. Chop them into bite-sized pieces and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.

Step 4

Add the chopped artichoke hearts to the skillet and cook for 4-5 minutes, stirring occasionally, until they are lightly golden and tender.

Step 5

Stir in the lemon juice, salt, black pepper, and red chili flakes (if using). Mix well to combine.

Step 6

Reduce the heat to low and add the cooked pasta to the skillet. Toss everything together to coat the pasta in the artichoke mixture.

Step 7

If the pasta seems dry, add the reserved pasta cooking water, a little at a time, until the desired consistency is reached.

Remove the skillet from heat and stir in the chopped parsley and grated parmesan cheese.

Taste and adjust seasoning with more salt and pepper if needed.

Serve immediately, garnished with additional parsley and parmesan cheese if desired.
