Ingredients

  • 400 grams pasta (linguine or spaghetti recommended)

  • 150 grams baby spinach leaves, washed and dried
  • 3 tablespoons pine nuts, toasted
  • 1 tablespoon fresh lemon juice
  • 0.5 teaspoons red pepper flakes
  • 50 grams parmesan cheese, grated (optional)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining. Set the pasta aside.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the chopped anchovies to the skillet and stir, allowing them to dissolve into the oil (approximately 1-2 minutes).

Add the minced garlic to the skillet and cook for 30 seconds, stirring frequently, until fragrant.

Add the baby spinach leaves to the skillet and cook until wilted, about 2-3 minutes.
