Ingredients

  • 12 oz pasta wheels (rotelle)
  • 2 tbsp olive oil
  • 8 oz Italian sausage (mild or spicy)
  • 3 count garlic cloves, minced
  • 2 cups cherry tomatoes
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)
  • 0.25 cup fresh basil leaves, chopped
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup reserved pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta wheels according to package instructions until al dente, about 8-10 minutes. Reserve 1/2 cup of the pasta cooking water and drain the rest. Set the pasta aside.

Step 2

Heat the olive oil in a large skillet over medium heat. Remove the sausage from its casing and crumble it into the skillet. Cook until browned and fully cooked, about 5-7 minutes, breaking it apart with a wooden spoon as it cooks.

Step 3

Add the minced garlic to the skillet with the sausage and cook for 1 minute until fragrant.

Step 4

Add the cherry tomatoes to the skillet. Cook, stirring occasionally, until the tomatoes begin to blister and release their juices, about 5 minutes.

Season the mixture with salt, black pepper, and red pepper flakes, if using. Stir to combine.

Add the cooked pasta wheels to the skillet along with 1/4 cup of the reserved pasta water. Toss everything together to coat the pasta in the sauce. Add more pasta water as needed to achieve your desired consistency.

Stir in the chopped basil and half of the grated Parmesan cheese. Remove the skillet from heat.
