Ingredients

  • 400 g fusilli pasta (pasta twists)
  • 400 g canned diced tomatoes
  • 200 g mozzarella cheese
  • 2 tbsp olive oil
  • 2 units garlic cloves
  • 10 units fresh basil leaves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 50 g parmesan cheese (optional, for serving)

Directions

Step 1

Bring a large pot of salted water to a boil over high heat.

Step 2

Cook the fusilli pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 3

While the pasta cooks, finely chop the garlic cloves.

Step 4

Heat the olive oil in a large skillet over medium heat. Add the chopped garlic and sauté for 1-2 minutes until fragrant.

Step 5

Add the canned diced tomatoes to the skillet. Stir in the salt and black pepper. Simmer the sauce for 10 minutes, stirring occasionally.

Slice the mozzarella cheese into small cubes, about 1 cm each.

Add the cooked pasta to the tomato sauce, along with the reserved pasta water to loosen the sauce if needed. Stir well to combine.

Remove the skillet from heat and gently fold in the mozzarella cubes, allowing them to melt slightly but remain gooey.

Tear the basil leaves into smaller pieces and stir them into the pasta.
