Ingredients

  • 300 grams Penne pasta
  • 200 grams Shrimp, peeled and deveined
  • 200 grams Bay scallops
  • 150 grams Cherry tomatoes, halved
  • 1 large Cucumber, diced
  • 1 small Red onion, thinly sliced
  • 50 grams Black olives, sliced
  • 2 tablespoons Fresh parsley, chopped
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice, freshly squeezed
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the penne pasta according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking. Set aside to cool.

Step 2

While the pasta cooks, prepare the seafood. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the shrimp and scallops, cooking until the shrimp are pink and the scallops are opaque, about 3-4 minutes per side. Remove from heat and let cool.

Step 3

In a large mixing bowl, combine the cooked and cooled pasta, cooled shrimp, scallops, cherry tomatoes, diced cucumber, red onion, black olives, and chopped parsley.

In a small bowl, whisk together the remaining olive oil, lemon juice, minced garlic, salt, black pepper, and crushed red pepper flakes (if using) to create the dressing.
