Ingredients

  • 2 tablespoons olive oil
  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic, minced
  • 1 medium red bell pepper, finely diced
  • 2 tablespoons tomato paste
  • 28 ounces canned crushed tomatoes
  • 14.5 ounces canned diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 0 optional grated Parmesan cheese (for serving)

Directions

Step 1

Heat olive oil in a large skillet or Dutch oven over medium heat.

Step 2

Add Italian sausage and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 6-8 minutes. Remove and set aside on a plate.

Step 3

In the same pan, add the diced onion and cook until softened, about 3-4 minutes.

Step 4

Stir in the garlic and red bell pepper, cooking for another 2 minutes until fragrant.

Step 5

Add the tomato paste to the pan and stir well, cooking for 1 minute to deepen the flavor.

Step 6

Pour in the crushed tomatoes and diced tomatoes, stirring to combine.

Step 7

Return the cooked sausage to the skillet and add the oregano, basil, crushed red pepper flakes (if using), sugar, salt, and black pepper.

Step 8

Reduce the heat to low, cover, and simmer for 20-25 minutes, stirring occasionally to prevent sticking.

Step 9

Taste and adjust seasoning as needed with additional salt and pepper.

Step 10

Serve the sauce hot over cooked pasta, garnished with fresh parsley and grated Parmesan cheese, if desired.
