Ingredients

  • 8 oz Pasta (fusilli, penne, or bowtie)
  • 2 cups Cherry tomatoes, halved

  • 0.5 cup Parmesan cheese, shredded

  • 1.5 tbsp Red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Honey
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper, freshly ground

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool the pasta quickly, then set aside to drain completely.

While the pasta is cooking, prepare the vegetables. Halve the cherry tomatoes and dice the red onion. If the peas are frozen, blanch them in boiling water for 1-2 minutes, then drain and rinse with cold water to stop the cooking process.
