Ingredients

  • 12 oz Penne pasta
  • 1 lb Raw shrimp (peeled and deveined)
  • 3 tbsp Olive oil
  • 2 Garlic cloves (minced)
  • 2 cups Cherry tomatoes (halved)
  • 1 cup Fresh basil leaves (chopped)
  • 0.5 Red onion (thinly sliced)
  • 3 tbsp Lemon juice
  • 2 tbsp Red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Bring a pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside to cool.

Step 2

While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 3

Add the shrimp to the skillet and cook for 3-4 minutes, flipping halfway, until the shrimp turn pink and are fully cooked. Remove from heat and let them cool slightly.

Step 4

In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, red wine vinegar, Dijon mustard, salt, and black pepper to make the dressing.
