Ingredients

  • 12 oz rotini pasta (or any short pasta)
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 medium red bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp poppy seeds
  • 1 cup mayonnaise
  • 2 tbsp honey
  • 2 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil.

Step 2

Cook the pasta according to the package instructions until al dente, about 8-10 minutes. Drain the pasta and rinse under cold water to cool it down.

Step 3

In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, feta cheese, and parsley. Toss gently to combine.

Step 4

In a medium bowl, whisk together the mayonnaise, honey, apple cider vinegar, olive oil, poppy seeds, salt, and black pepper to make the dressing.

Step 5

Pour the poppy seed dressing over the pasta mixture. Toss until everything is evenly coated.

Step 6

Refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld together.

Step 7

Serve chilled as a side dish or light main meal. Enjoy!
