  • 12 oz rigatoni pasta

  • 2 tbsp fresh parsley (chopped)
  • 0.25 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 1 clove garlic (minced)
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Cook the rigatoni pasta according to the package instructions in a large pot of salted boiling water. Drain and rinse under cold water to stop the cooking process, then set it aside to cool.
