Ingredients

  • 250 grams penne pasta
  • 200 grams cherry tomatoes
  • 1 large cucumber
  • 1 small red onion
  • 100 grams kalamata olives
  • 150 grams feta cheese
  • 60 ml extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 clove garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Cook the penne pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process and cool the pasta. Set aside.

While the pasta is cooking, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, thinly slice the red onion, and roughly chop the kalamata olives.
