Ingredients

  • 400 g spaghetti
  • 4 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 6 anchovy fillets, finely chopped
  • 0.5 tsp red chili flakes
  • 400 g canned diced tomatoes
  • 100 g pitted black olives, roughly chopped
  • 3 tbsp capers, rinsed
  • 2 tbsp fresh parsley, chopped
  • 0 to taste salt
  • 0 to taste black pepper
  • 50 g Parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water before draining, then set the spaghetti aside.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.

Step 3

Add the chopped anchovy fillets and stir until they dissolve into the oil, about 2 minutes.

Step 4

Stir in the red chili flakes and let them bloom in the oil for 30 seconds.

Step 5

Add the canned diced tomatoes to the skillet, stirring to combine. Simmer for 5 minutes to let the flavors meld.

Step 6

Toss in the chopped olives and rinsed capers, stirring to evenly distribute them. Cook for another 2-3 minutes.

Step 7

Season the sauce with salt and black pepper to taste, keeping in mind the natural saltiness from the anchovies, olives, and capers.

Step 8

Add the cooked spaghetti to the sauce in the skillet. Toss thoroughly to coat the pasta, adding splashes of reserved pasta water as needed to achieve a silky consistency.

Step 9

Sprinkle the chopped fresh parsley over the pasta and toss lightly.

Step 10

Serve immediately, garnished with additional parsley and grated Parmesan cheese, if desired.
