  • 2 cups baby spinach
  • 1 cup fresh basil leaves, chopped
  • 0.5 cup fresh parsley, chopped
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 0.25 cup grated parmesan cheese (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water and drain the rest. Set the pasta aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
