Ingredients

  • 12 oz Penne pasta
  • 1 cup Frozen peas
  • 1 cup Basil pesto
  • 0.5 cup Parmesan cheese, grated
  • 0.25 cup Heavy cream
  • 2 tbsp Olive oil
  • 2 cloves Garlic cloves, minced
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Pine nuts (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil.

Step 2

Add the penne pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 3

In the same pot, heat the olive oil over medium heat.

Step 4

Add the minced garlic and cook for 1 minute until fragrant, stirring frequently to avoid burning.

Step 5

Stir in the frozen peas and cook for 2-3 minutes until heated through.

Step 6

Reduce the heat to low and add the basil pesto, heavy cream, grated parmesan cheese, salt, and black pepper. Stir until the mixture is well combined and creamy.

Step 7

Add the cooked pasta back into the pot and toss to coat evenly with the sauce.

Step 8

If the sauce is too thick, stir in small amounts of the reserved pasta water until you reach your desired consistency.

Step 9

Taste and adjust seasoning with additional salt and pepper if needed.

Step 10

Serve immediately, garnished with pine nuts and extra parmesan cheese, if desired.
