  • 1 medium yellow onion, diced
  • 3 large garlic cloves, minced

  • 1 medium celery stalk, diced
  • 15 ounces crushed tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 cup small pasta (such as ditalini or elbow)
  • 15 ounces cannellini beans, rinsed and drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.25 teaspoons red pepper flakes (optional)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (optional garnish)
  • 0.25 cup Parmesan cheese, grated (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, garlic, carrot, and celery. Sauté for 5-7 minutes until vegetables are softened and aromatic.

Stir in the crushed tomatoes, vegetable broth, oregano, basil, red pepper flakes (if using), salt, and black pepper. Bring the mixture to a boil.
