Ingredients

  • 300 g Pasta of choice (e.g., penne, fusilli, or spaghetti)
  • 2 tbsp Olive oil
  • 3 pieces Garlic cloves, minced
  • 200 g White button mushrooms, sliced
  • 250 g Fresh broccoli florets
  • 400 g Canned crushed tomatoes
  • 150 ml Heavy cream
  • 50 g Parmesan cheese, grated
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 0.5 tsp Red pepper flakes (optional)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped (optional, for garnish)
  • 1.5 L Water
  • 1 tbsp Salt (for boiling pasta)

Directions

Step 1

Bring 1.5L of water to a boil in a large pot and add 1 tbsp of salt. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, heat 2 tbsp of olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.

Step 4

Add the sliced mushrooms to the skillet and cook for 5-7 minutes until they release their moisture and turn golden brown.

Step 5

Add the broccoli florets to the skillet and sauté for 3-4 minutes until they are tender-crisp.

Step 6

Pour the crushed tomatoes into the skillet and stir well to combine. Season with oregano, basil, red pepper flakes (if using), salt, and black pepper. Simmer for 5 minutes.

Step 7

Lower the heat and stir in the heavy cream. Cook for another 3-4 minutes, allowing the sauce to thicken slightly.

Step 8

Add the cooked pasta to the skillet and toss to coat the pasta with the sauce. If the sauce is too thick, gradually add some reserved pasta water to reach your desired consistency.

Step 9

Stir in the grated Parmesan cheese until melted and fully incorporated.

Taste and adjust the seasoning as needed with additional salt or pepper.
