Ingredients

  • 12 oz penne pasta
  • 2 pieces boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup sun-dried tomatoes (packed in oil)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 3 pieces garlic cloves, minced
  • 2 tbsp unsalted butter
  • 0.25 tsp red pepper flakes (optional)
  • 2 tbsp fresh basil (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

Step 2

While the pasta is cooking, season both sides of the chicken breasts with salt and black pepper.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for 6-7 minutes per side or until fully cooked and golden brown. Remove the chicken from the skillet and let it rest for 5 minutes, then slice into thin strips.

In the same skillet, add the remaining 1 tablespoon of olive oil and the butter. Once the butter has melted, add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant.
