  • 1 can (15 oz), drained and rinsed black beans
  • 1 cup sweet corn kernels
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 cup heavy cream
  • 1.5 cups, shredded cheddar cheese
  • 0.25 cup chopped fresh cilantro
  • 1 large, cut into wedges lime

Directions

Step 1

Bring a large pot of salted water to a boil and cook the penne pasta according to the package instructions until al dente. Drain the pasta and set it aside.
