  • 400 grams penne pasta
  • 2 tablespoons olive oil

  • 1 medium zucchini, diced
  • 200 grams mushrooms, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1 handful fresh basil leaves, chopped
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 liters water
  • 2 tablespoons salt for pasta water

Directions

Step 1

Bring 4 liters of water to a boil in a large pot. Add 2 tablespoons of salt to the boiling water.

Step 2

Add the penne pasta to the boiling water and cook according to the package instructions until al dente. Drain the pasta and set aside.

In a large skillet or saucepan, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat until the butter is melted.

Add the minced garlic and diced onion to the skillet. Sauté for 2-3 minutes until the onion becomes translucent and fragrant.
