Ingredients

  • 8 ounces cooked spaghetti
  • 3 large eggs
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons red pepper flakes (optional)

Directions

Step 1

In a medium bowl, whisk the eggs until fully combined. Stir in the grated Parmesan cheese, salt, black pepper, and red pepper flakes (if using). Set aside.

Step 2

Heat a large skillet over medium heat and add the butter and olive oil. Once the butter is melted, add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 3

Add the cooked spaghetti to the skillet and toss it in the garlic butter oil to heat through, about 2-3 minutes.

Step 4

Reduce the heat to low. Pour the egg and Parmesan mixture over the spaghetti, tossing quickly with tongs or a fork to coat the pasta evenly and gently cook the eggs. Be careful not to let the eggs scramble too much; they should form a creamy coating around the spaghetti.

Step 5

Turn off the heat and sprinkle the chopped parsley over the pasta. Taste and adjust seasoning if necessary.

Step 6

Serve immediately while warm. Garnish with extra Parmesan cheese, if desired.
