  • 1 pound pasta (penne, rigatoni, or your choice)
  • 4 quarts water for boiling pasta
  • 1 tablespoon salt for pasta water

Directions

Step 1

Heat the olive oil in a large skillet or sauté pan over medium heat.

Remove the sausage from its casing (if needed) and add it to the pan. Cook the sausage, breaking it into small pieces with a wooden spoon, until browned and fully cooked, about 5–7 minutes. Remove the sausage from the pan with a slotted spoon and set aside.
