Ingredients

  • 300 g spaghetti or linguine
  • 200 g cherry tomatoes
  • 150 g baby spinach
  • 2 tbsp extra virgin olive oil
  • 3 units garlic cloves
  • 0.5 tsp red chili flakes
  • 50 g Parmesan cheese (grated)
  • 10 leaves fresh basil leaves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp lemon zest

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Step 3

Finely mince the garlic cloves and add them to the skillet. Cook for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 4

Slice the cherry tomatoes in half and add them to the skillet with the garlic. Cook for 3-4 minutes, stirring occasionally, until the tomatoes begin to soften and release their juices.

Step 5

Add the baby spinach to the skillet and cook for another 2-3 minutes, until wilted.

Step 6

Stir in the red chili flakes, salt, and black pepper.

Step 7

Add the cooked pasta to the skillet and toss to coat it with the vegetable mixture. If the pasta seems dry, add a splash of the reserved pasta water, a little at a time, until the desired consistency is achieved.

Step 8

Remove the skillet from heat and stir in the lemon zest and fresh basil leaves.

Step 9

Serve immediately, garnished with grated Parmesan cheese.
