Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil

  • 2 medium carrots, diced
  • 2 medium celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 28 ounces crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 15 ounces cannellini beans, drained and rinsed
  • 15 ounces red kidney beans, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup dried ditalini pasta
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a skillet over medium heat. Add the ground turkey and cook, breaking it up into small pieces, until browned, about 5-7 minutes. Drain any excess fat and transfer the cooked turkey to the crock pot.

Step 2

In the same skillet, add the diced onion, carrots, celery, and minced garlic. Cook for 3-5 minutes until the vegetables are slightly softened. Transfer them to the crock pot.

To the crock pot, add the crushed tomatoes, chicken broth, cannellini beans, kidney beans, oregano, basil, thyme, bay leaf, salt, and black pepper. Stir everything together until well combined.
