Ingredients

  • 3 tablespoons Olive oil
  • 1 medium, finely chopped White onion
  • 2 minced Garlic cloves
  • 2 cups Frozen peas
  • 8 ounces Pasta (small shapes like ditalini or elbow macaroni)
  • 4 cups Vegetable or chicken broth
  • 1 cup Water
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cup Grated Parmesan cheese
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the finely chopped onion and sauté for 3-4 minutes until softened and translucent.

Step 3

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 4

Add the frozen peas to the pot and stir, cooking for 2 minutes.

Step 5

Pour in the vegetable or chicken broth and 1 cup of water. Bring the mixture to a boil.

Step 6

Stir in the pasta and add the salt and black pepper. Reduce the heat to medium-low and simmer, stirring occasionally, for 10-12 minutes or until the pasta is cooked al dente. If the mixture becomes too thick, you can add extra water, a little at a time, to reach your desired consistency.

Step 7

Once the pasta is cooked, turn off the heat and stir in the grated Parmesan cheese.

Step 8

Taste and adjust seasoning if needed.

Step 9

Serve hot, garnished with fresh parsley and an additional sprinkle of Parmesan, if desired.
