  • 15 ounces kidney beans (canned, drained and rinsed)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup dried ditalini pasta
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 0.25 cup grated Parmesan cheese (optional, for serving)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the diced onion, carrot, and celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until softened and fragrant.

Step 3

Stir in the minced garlic and cook for an additional 1-2 minutes.

Step 4

Add the canned diced tomatoes and tomato paste to the pot. Stir well to combine.

Add the cannellini beans, kidney beans, dried oregano, and dried basil. Season with salt and black pepper. Stir to combine.

Step 7

Reduce the heat to low, cover the pot, and simmer for 20 minutes, allowing the flavors to meld together.
