Ingredients

  • 400 g Penne pasta
  • 2 tbsp Olive oil
  • 4 Garlic cloves, minced
  • 300 g Cherry tomatoes, halved
  • 200 ml Heavy cream
  • 10 g Fresh basil leaves, chopped
  • 50 g Grated Parmesan cheese
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Crushed red chili flakes (optional)
  • 4 liters Water

Directions

Step 1

Bring 4 liters of water to a rolling boil in a large pot. Add a generous pinch of salt and cook the penne pasta according to the package instructions, until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 4

Toss in the halved cherry tomatoes and cook for 6-8 minutes, stirring occasionally, until the tomatoes soften and release their juices.

Lower the heat and stir in the heavy cream. Let the sauce simmer gently for 2-3 minutes until slightly thickened.

Add the salt, black pepper, and optional chili flakes for a touch of heat. Taste and adjust the seasoning if needed.
