Ingredients

  • 300 grams pasta (penne, fusilli, or your choice)
  • 2 tablespoons olive oil
  • 3 units garlic cloves, minced
  • 1 medium onion, finely chopped
  • 400 grams canned crushed tomatoes
  • 1 cup sweet corn kernels (fresh, frozen, or canned)
  • 1 cup cooked beans (kidney beans, black beans, or chickpeas)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red chili flakes (optional)
  • 0.5 cup parmesan cheese, grated (optional)
  • 0 to taste salt
  • 0 to taste black pepper
  • 2 tablespoons fresh parsley or basil leaves, chopped (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

Heat the olive oil in a large skillet or saucepan over medium heat. Add the minced garlic and chopped onion, and sauté for 3-4 minutes until the onion becomes translucent and fragrant.

Step 3

Stir in the crushed tomatoes, dried oregano, dried basil, and red chili flakes (if using). Season the sauce with salt and black pepper to taste. Let it simmer for 5-7 minutes, stirring occasionally.

Step 4

Add the sweet corn kernels and cooked beans to the tomato sauce. Stir well and cook for an additional 3-4 minutes to allow the flavors to meld together.

If the sauce looks too thick, add a splash of the reserved pasta water to reach your desired consistency.

Add the cooked pasta to the pan and toss well to coat the pasta evenly with the sauce. Cook for 1-2 minutes to heat everything through.

Remove from heat and, if desired, sprinkle grated parmesan cheese over the pasta. Toss lightly to combine.
