Ingredients

  • 400 grams pasta (such as fettuccine, linguine, or spaghetti)
  • 120 grams shelled walnuts
  • 2 pieces garlic cloves
  • 50 grams Parmesan cheese (grated)
  • 4 tablespoons extra virgin olive oil
  • 120 milliliters heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper (freshly ground)
  • 2 tablespoons fresh parsley (chopped)
  • 3 liters water for boiling pasta

Directions

Step 1

Bring 3 liters of water to a boil in a large pot. Add 1 teaspoon of salt and the pasta. Cook according to the package instructions until al dente, usually about 8-10 minutes.

Step 2

While the pasta cooks, prepare the walnut sauce. Add the shelled walnuts, garlic cloves, 2 tablespoons of olive oil, and a pinch of salt to a food processor. Pulse until the mixture forms a coarse paste.

In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the walnut paste and cook for 1-2 minutes, stirring constantly to prevent burning.
