Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 300 grams penne pasta
  • 2 tablespoons olive oil
  • 3 pieces garlic cloves, minced
  • 1 medium onion, diced
  • 1 teaspoon red chili flakes
  • 1 teaspoon paprika
  • 0.5 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper
  • 400 grams crushed tomatoes
  • 100 milliliters heavy cream
  • 50 grams Parmesan cheese, grated
  • 2 tablespoons fresh basil leaves, chopped
  • 2 liters water
  • 1 tablespoon salt, for boiling pasta

Directions

Step 1

Bring 2 liters of water to a boil in a large pot. Add 1 tablespoon of salt and the penne pasta. Cook according to package instructions until al dente, usually 9-11 minutes. Drain and set aside.

Step 2

While the pasta is cooking, dice the chicken breasts into bite-sized pieces and season with a pinch of salt and black pepper.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes, until golden and fully cooked. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the minced garlic and diced onion for 2-3 minutes until fragrant and translucent.

Lower the heat to medium and stir in the red chili flakes, paprika, ground cumin, cayenne pepper, and 1 teaspoon of salt. Cook for 1 minute to toast the spices.

Add the crushed tomatoes to the skillet and stir well. Simmer for 10 minutes, allowing the sauce to thicken.

Stir in the heavy cream and mix until the sauce is smooth. Add the cooked chicken back into the skillet and simmer for an additional 3-5 minutes to heat through.

Toss the drained pasta into the skillet, ensuring it’s fully coated in the sauce. Sprinkle in the grated Parmesan cheese and mix well.

Step 9

Garnish with chopped fresh basil leaves and serve immediately. Optionally, top with extra cheese or a pinch of chili flakes for added heat.
