Ingredients

  • 300 grams short pasta (penne, fusilli, or farfalle)
  • 150 grams bacon, diced
  • 50 grams grated Parmesan cheese
  • 2 pieces large eggs
  • 3 tablespoons mayonnaise
  • 3 tablespoons sour cream
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 piece garlic clove, minced
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain the pasta, rinse with cold water, and set it aside to cool completely.

Step 2

While the pasta is cooking, heat a skillet over medium heat. Add the diced bacon and cook until crispy, about 5-7 minutes. Transfer to a plate lined with paper towels to drain excess grease.

Step 3

In a small bowl, whisk together the eggs until well combined. Place the eggs in a small saucepan over low heat and whisk constantly until they start to thicken slightly, about 1-2 minutes. Be careful not to overcook them—this step is to gently cook the eggs. Remove from heat, let cool slightly, and set aside.

Step 4

In a large mixing bowl, combine the mayonnaise, sour cream, grated Parmesan cheese, parsley, lemon juice, minced garlic, salt, and black pepper. Mix until smooth and creamy.

Step 5

Add the cooled pasta, cooked bacon, and the slightly cooked eggs to the bowl with the dressing. Toss gently to coat everything evenly.

Step 6

Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld together.

Step 7

Before serving, give the salad a final toss and adjust the seasoning with extra salt or pepper if needed. Garnish with additional Parmesan cheese or parsley for an extra touch of flavor.
