  • 400 grams Spaghetti
  • 150 grams Pancetta or guanciale
  • 4 pieces Egg yolks
  • 50 grams Grated Parmesan cheese
  • 50 grams Grated Pecorino Romano cheese
  • 2 cloves Garlic (optional)
  • 1 to taste Salt
  • 1 to taste Freshly ground black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, according to the package instructions.

While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the pancetta or guanciale and cook until golden and crispy, about 5–7 minutes. If desired, add the minced garlic in the last 1–2 minutes for additional flavor, then remove the garlic before proceeding.

In a medium bowl, whisk together the egg yolks, Parmesan cheese, Pecorino Romano cheese, and a generous pinch of black pepper to form a creamy mixture. Set aside.
