Directions

Step 1

Boil a large pot of salted water and cook the pasta until al dente, as per package instructions. Reserve 1/4 cup of pasta water, then drain the pasta and set aside.

In the same boiling water, blanch the broccoli florets for 2-3 minutes until tender but still bright green. Drain the broccoli and chop it into small pieces.

In a large mixing bowl, whisk together the eggs, Parmesan cheese, mozzarella cheese, salt, and black pepper.

Add the cooked pasta, chopped broccoli, and minced garlic to the bowl with the egg mixture. Stir well to combine, ensuring the pasta and broccoli are evenly coated.
