  • 1 teaspoon dried basil
  • 1 whole bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 400 grams pasta (e.g., spaghetti or fettuccine)
  • 100 grams grated Parmesan cheese
  • 150 grams mozzarella cheese, shredded
  • 3 liters water
  • 1 tablespoon extra salt for pasta water

Directions

Step 1

Heat the olive oil in a large skillet or heavy-bottomed pot over medium heat.

Add the finely chopped onion, carrot, and celery to the pan. Sauté for 5-7 minutes until the vegetables are softened and translucent.
