Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, finely chopped
  • 1 medium carrot, finely chopped
  • 1 large celery stalk, finely chopped
  • 3 cloves garlic cloves, minced
  • 1 pound ground beef (or a mix of beef and pork)
  • 2 tablespoons tomato paste
  • 28 ounces canned crushed tomatoes
  • 1 cup dry white wine (or red wine)
  • 1 cup milk
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 piece bay leaf
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 pound pasta (such as tagliatelle, spaghetti, or penne)
  • 0.5 cup parmesan cheese, grated (for serving)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large, deep skillet or heavy-bottomed saucepan over medium heat.

Step 2

Add the chopped onion, carrot, and celery. Cook, stirring frequently, for 5-7 minutes, or until the vegetables are softened.

Step 3

Add the minced garlic and cook for 1 minute, until fragrant.

Step 4

Increase the heat to medium-high and add the ground beef. Cook, breaking it apart with a wooden spoon, until browned and no longer pink, about 8-10 minutes. Drain any excess fat if necessary.

Step 5

Stir in the tomato paste and cook for 2 minutes to deepen its flavor.

Step 6

Pour in the crushed tomatoes and wine, stirring well to combine.

Step 7

Add the milk, oregano, basil, bay leaf, salt, and black pepper. Stir to combine and bring the sauce to a gentle simmer.

Step 8

Reduce the heat to low, cover partially, and let the sauce simmer for at least 1.5 to 2 hours, stirring occasionally. If the sauce becomes too thick, add a splash of water to loosen it.

Step 9

About 15 minutes before the sauce is ready, bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water before draining.

Step 10

Discard the bay leaf from the sauce and taste for seasoning, adjusting salt and pepper as needed.

Step 11

Toss the drained pasta with the Bolognese sauce, adding a little reserved pasta water if needed to coat the pasta evenly.

Step 12

Serve hot, topped with grated Parmesan cheese and a sprinkle of fresh parsley if desired.
