Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 14 ounces crushed tomatoes (canned)
  • 1 cup vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup white beans (cooked or canned, drained and rinsed)
  • 8 ounces penne or other short pasta
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 0.25 cup grated Parmesan cheese (optional, for serving)

Directions

Step 1

Heat the olive oil in a large skillet or saucepan over medium heat.

Step 2

Add the chopped onion and cook for 4-5 minutes, stirring occasionally, until softened and translucent.

Step 3

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 4

Pour in the crushed tomatoes and vegetable broth. Stir to combine.

Step 5

Add the oregano, basil, salt, and black pepper. Reduce the heat to low and let the sauce simmer gently for 10-12 minutes, stirring occasionally.

Step 6

Meanwhile, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta.

Step 7

Stir the white beans into the tomato sauce and continue to cook for 5 minutes, allowing the beans to heat through and absorb the flavors.

Step 8

Add the cooked pasta to the skillet with the tomato sauce and beans. Stir well to coat the pasta evenly in the sauce. If the sauce is too thick, add a splash of the reserved pasta cooking water to loosen it.

Step 9

Taste the dish and adjust seasoning with additional salt and pepper, if needed.

Step 10

Serve hot, garnished with freshly chopped parsley and grated Parmesan cheese, if desired.
