  • 12 oz pasta (penne or fusilli)
  • 2 tbsp olive oil
  • 1 lb Italian sausage (mild or spicy, casings removed)
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 28 oz crushed tomatoes
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 0.5 tsp red pepper flakes (optional)
  • 1 tsp dried basil
  • 0 to taste salt
  • 0 to taste black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it up into smaller pieces with a wooden spoon, until browned and fully cooked, about 6-8 minutes. Remove the cooked sausage from the skillet and set aside.

Step 3

In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
