Ingredients

  • 250 grams Pasta (penne, fusilli, or spaghetti)
  • 300 grams Broccoli florets
  • 4 tablespoons Olive oil
  • 3 large Garlic cloves
  • 0.5 teaspoons Red chili flakes (optional)
  • 50 grams Parmesan cheese (grated)
  • 1 teaspoons Salt
  • 0.25 teaspoons Black pepper (freshly ground)
  • 120 milliliters Pasta water (reserved)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 120 milliliters of pasta water before draining the pasta.

Step 2

While the pasta is cooking, prepare the broccoli by cutting it into small florets. Add the broccoli to the boiling pasta water 3-4 minutes before the pasta finishes cooking to blanch it.

Step 3

In a large skillet, heat the olive oil over medium heat. Finely mince the garlic cloves and add them to the skillet. Sauté for 1-2 minutes, stirring frequently, until fragrant but not browned.

Step 4

If using red chili flakes, add them to the skillet with the garlic and sauté for an additional 30 seconds.

Step 5

Add the drained pasta and broccoli to the skillet. Pour in the reserved pasta water and toss everything together until well coated in the garlic-infused oil.

Step 6

Stir in the grated Parmesan cheese, salt, and black pepper. Mix well until the cheese is melted and the sauce clings to the pasta and broccoli.
