Ingredients

  • 3 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 medium carrot, finely diced
  • 2 celery stalks, finely diced
  • 1 cup canned crushed tomatoes
  • 4 cups vegetable or chicken broth
  • 2 cups canned cannellini beans, rinsed and drained
  • 1.5 cups small pasta (e.g., ditalini or elbow)
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup parmesan cheese, grated (optional)
  • 2 tablespoons fresh parsley, chopped (optional)
  • 0.25 teaspoon red pepper flakes (optional, for heat)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion, garlic, carrot, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened and aromatic.

Step 3

Stir in the crushed tomatoes, oregano, thyme, and bay leaf. Cook for 2-3 minutes.

Step 4

Pour in the broth, then add the cannellini beans. Stir well to combine.

Step 5

Bring the mixture to a gentle boil, then reduce the heat to a simmer. Cover partially and cook for 10 minutes to allow the flavors to meld.

Step 6

Add the pasta to the pot. Stir to ensure it doesn't stick to the bottom.

Step 7

Simmer uncovered for 8-10 minutes, or until the pasta is tender, stirring occasionally to prevent sticking.

Step 8

Season with salt, black pepper, and red pepper flakes if desired. Taste and adjust seasoning as needed.

Step 9

Remove the bay leaf, then ladle the pasta and beans into bowls.

Step 10

Top with grated parmesan and fresh parsley, if desired. Serve warm and enjoy!
