Ingredients

  • 400 g Penne pasta
  • 250 ml Heavy cream
  • 150 g Prosciutto
  • 100 g Parmesan cheese
  • 15 g Fresh parsley
  • 150 g Frozen peas
  • 2 tbsp Olive oil
  • 2 Garlic clove
  • 1 tbsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water and drain the pasta.

Step 2

While the pasta cooks, finely chop the garlic and parsley. Cut the prosciutto into thin strips.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the garlic and cook for 1 minute until fragrant, being careful not to burn it.

Step 4

Add the prosciutto strips to the skillet and sauté for 2-3 minutes until slightly crisp.

Step 5

Stir in the frozen peas and cook for another 2-3 minutes until they are thawed and heated through.

Step 6

Lower the heat to medium-low and pour in the heavy cream. Add half of the grated Parmesan cheese and stir until it melts and combines into a creamy sauce.

Step 7

Season the sauce with salt and black pepper, adjusting to taste. If the sauce feels too thick, gradually add a little of the reserved pasta water to reach your desired consistency.

Step 8

Add the drained pasta to the skillet and toss to coat it evenly in the sauce. Cook for 1-2 minutes to allow the flavors to meld together.

Step 9

Remove the skillet from the heat and sprinkle the dish with the remaining Parmesan cheese and the chopped parsley.

Step 10

Serve immediately, garnished with additional parsley or Parmesan, if desired. Enjoy your Pasta Alle Cinque Pi while it's warm and creamy!
