  • 1 cup Matzo meal
  • 0.5 cup Water
  • 1 large Egg
  • 3 tablespoons Olive oil
  • 1 medium Zucchini
  • 1 medium Red bell pepper
  • 1 small Purple onion
  • 2 cups Baby spinach
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 2 tablespoons Parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

In a large mixing bowl, combine the matzo meal, water, egg, and 1 tablespoon of olive oil. Stir until a dough forms.

Lightly grease a muffin tin with olive oil and press the dough into the bottoms and sides of each cup to create small crusts.
